I am wondering why I can buy the [-40 to 85C] sensor on here, but the attached datasheet does not even show this temperature range. The closest range given on the attached datasheet is [-18 to 38C].

The BAPI Surface Temperature devices can be built with temperature ranges beyond those listed in the product datasheet. However those custom ranges are subject to factory availability.
The temperature range [-40 to 85C] is not shown in the Product datasheet but is available as a custom build option.
Currently, the part number BA/TXS10[-40 TO 85C]-SMFEP-10’-BB2 is available for special order with an estimated lead time of 1-2 weeks.
